Boiled Fruit Cake
Difficulty: Medium
Serves: 6
INGREDIENTS:
400g mixed dried fruits
1 cup brown sugar
250g butter or margarine
1 cup sweet sherry
1/4 cup water
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 tablespoon golden syrup
A little grated lemon rind
1/2 cup slivered almonds
2 eggs, beaten
1 cup self-raising flour
1 cup plain flour

RECIPE DIRECTIONS:
- Place all of the above ingredients (except eggs and flour) into a large saucepan, bring to the
boil, simmer for a few minutes.
- Take from the heat, allow to cool slightly, then add eggs and flour. Blend well into the fruit mixture.
- Turn into greased round cake pan. Bake in moderate oven for approximately 1 1/2 to 2 hours.
- Test with skewer to determine readiness. Allow cake to cool in tin before turning out.
